Ingredients

Wet Ingredients

  • 1 cup unsalted butter Softened at room temperature
  • 1 cup granulated sugar Adjust to taste
  • 2 tbsp orange zest Freshly grated
  • 1/4 cup fresh orange juice
  • 1 egg Large

Instructions
 

  • Cream the butter and sugar in a large mixing bowl until light and fluffy (about 2-3 minutes).
  • Add the egg, orange zest, and orange juice to the creamed mixture. Mix until fully combined.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Chill the dough in the refrigerator for 30 minutes to make it easier to handle.
  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Roll out the dough on a lightly floured surface to about 1/4-inch thickness.
  • Use a fish-shaped cookie cutter to cut out cookies and place them on the prepared baking sheet.
  • Bake for 10-12 minutes, or until the edges are lightly golden.
  • Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes
